  2. What is Pasta? It is the staple in Italian cuisine. Like noodles, it is made of semolina flour, which is made of durum wheat. This wheat is high on both gluten and protein. Semolina flour is mixed with water and kneaded in vacuum to create the dough. The dough is then pushed through different machines and moulds to get the desired shape, depending on the type of pasta.
