  1. Heard of the Bhel Puri? Who has not! Once an appetizer, it is now known as one of the most famous Indian street foods. A famous legend regarding the bhel puri comes down a long way from the time when the British had colonised India. There was this cook by the name of William who with his brilliant culinary skills went on to become the personal cook of the then English officer residing in India. He was shot dead by the officer because he couldn't prepare a proper bhel puri!! It has been heard that the workers had revolted after that incident. Nevertheless, the moral of the story is not how bhel puri stirred a revolution in the colonization period but the fact that every Indian recipe has way too many recipes for one's knowledge. Indian cuisine is a storehouse of diverse recipes for a single dish. The same dish has different taste, presentation and recipe in different regions of the country. On a lighter note, the variety of Indian cuisine is justified considering the diversity in the huge population of 1.2 billion. The traditional and cultural history of the country played an important role in the devising of the Indian cuisine. One wouldn't be completely wrong if he or she mistakes the vastness and diversity of Indian cuisine with that of Europe's. Right from the northern part of India to South India, and from Bengal to Gujarat, you won't find the plate in front of you even distantly similar. Moreover, India probably is the richest in terms of spices, boasting of everything from Gujarat's salty namkeen snacks, the variety of spicy curries from Punjab to the sweets of Bengal. The north being mostly rural, the usage of wheat dominates in this cuisine. On the other hand, rice dominates the dishes of south. In India, recipes are like age old treasures. They have a similarity with the epics, which are mythological stories passed on from generation to generation verbally with interpolations at every stage. Likewise, the recipes are passed on from generation to generation orally, and at every stage a change occurs maybe in the form of a new ingredient or a new method of cooking. The beauty of Indian cuisine lies in its evolution.
