  2. Dim Sum • Literally means “to touch the heart” • Not a particular food; many different foods are in the category “dim sum” • Akin to snack foods or hors d'oeuvres Dim sum being served in a Hong Kong restaurant.

  3. History • Dim sum originated in the days of the Silk Road in China • Dim sum is related to the custom of “yum cha” or drinking tea • Teahouses appeared on the Silk Road and elsewhere, and the houses and customs expanded to include light dim sum snacks and meals

Bauzi Commonly bau or bao A steamed bread-like bun with meat or vegetable filling Barbecue pork appears to be the most common in America Gow Stuffed, steamed dumplings made with rice flour skin Skin is usually thin enough to be translucent Filling is usually shrimp-based, but vegetable and meat fillings exist Kinds of dim sum

Cheon Gyun Also known a spring rolls Made by wrapping filling (usually vegetable) in a flour skin and deep frying Siu Maai Steamed open-top dumpling Wheat flour skin Usually pork filling Many others Rice noodle rolls Chicken feet deep fried, boiled, marinated, then steamed More kinds of dim sum
