  4. Nutritional Facts • Rich in vitamins, minerals and anti-oxidants • Contains an enzyme that helps in digestion • Great Source of Vitamins A and C • Good Source of Potassium and beta-carotene • High Fiber Content • 110 calories/average sized mango & 1 gm of fat

  5. Other Uses of Mangoes • Mango Leaves are a sign of purity • Fresh Mango leaves hung on front door for prosperity and fortune • Mango leaves are used for decoration during most Hindu festivals and weddings

  6. Recipes • Ripe Mangoes: • Mango lassi (yogurt drink) • Mango Shakes • Mango Ice creams • Mango Burfi (a sweet) • Raw Mangoes: • Pickled into Chutney (kind of a dip) • Mango Rice • Mango Lentils • Dried and ground into a powder called • 'Aamchur' which is used as a seasoning.

  7. Demonstration (Mango Pie) Ingredient List: • ½ can of Mango Pulp (or 3 Mangoes) • 2 sachets of Unflavored Gelatin (or 2 table spoons of AgarAgar - vegetarians) • 8 oz of Cream Cheese • Graham cookies Pie crust • ½ cup of Sugar • 10 crushed Pistachios (optional)

  8. Demonstration (Mango Pie) Method: • Heat ¼ cup of water and add gelatin to it. Keep stirring it on low flame until the gelatin is completely dissolved • Blend this above gelatin solution, mango pulp, cream cheese and sugar into a smooth batter

  9. Demonstration (Mango Pie) Method (continued): • Based on how sweet the mango pulp is, you can adjust the quantity of sugar • Pour this mixture into the pie crust and decorate it with crushed Pistachios • Refrigerate it (not freeze) for about 6 hours and it is ready to eat
