What is Celiac Disease? • Autoimmune digestive disease • Damages small intestine villi, causing problems when absorbing food • Triggered by digestion of gluten • Found in wheat, barley, and rye • When people with Ciliac’s eat gluten, the body attacks itself, misinterpreting the gluten as a harmful substance

  3. Common Items with Gluten • Beer • Cakes and Pies • Cereals • Cookies • French Fries • Matzo • Pasta • Soy sauce • Soups

  4. Symptoms • Bloating • Fatigue • Constipation • Numbness • Depression • Headaches • Delayed Growth

  5. Treatment • Blood tests performed to confirm diagnosis • Symptoms mimic other diseases • Only treatment is gluten-free diet for the entire life of the patient • Must have alternatives such as brown rice, buckwheat and corn starch
