  1. Zymurgy Or how to make beer

  2. Some terms • Specific gravity: a reading of the suspended sugars. Use a hydrometer. The difference between the original gravity and final gravity tells you how much alcohol you made. • Wort: sweet, amber liquid extracted from malted barley. The yeast will ferment this liquid into beer. • Ferment: The activity of the yeast turning sugars into alcohol and carbon dioxide. • Hops: The flower of the hop plant which is a member of the hemp family. They contain an essential oil that is bitter. The bitterness comes out more as the oil is broken down during the boiling process. The bitterness balances the sweetness of the grain. • Malt: Barley or other grain that has been steeped, germinated, and dried, used esp. for brewing or distilling and vinegar-making.

  3. History of beer • Since 5th millennium BC • Beer made for health reasons, not artisan • Thick like porriage • 15th century AD • Gradually becoming artisan • Controversy over ingredients allowed • Water, malt, yeast • Water, malt, yeast, hops • Other herbs and spices • Modern • Industrial revolution • Hydrometer • Craft beer

  4. How is it done? • Malted barley is soaked in hot water to create fermentable sugars. • The malt sugar solution is boiled with hops for seasoning. • The solution is cooled, and yeast is added to begin fermentation. • The yeast ferments the sugars, releasing carbon dioxide and ethyl alcohol • When the main fermentation is complete, the beer is bottled with a little bit of added sugar to provide the carbonation.

  5. You can make really good beer at home You only need a few things: beginner brewing kit, a place to buy ingredients, some space, patience There are some considerations to be aware of: • Most beginner kits are missing things you’ll need: brew pot • You’ll probably want to expand your kit early: glass carboy for secondary fermentation/bulk aging, wort chiller, blow-off hose (for those high gravity beers)

  6. Useful Tools • Trello- if you make a lot of beer. You need to know where they all are in the process and what you have in inventory. • www.brewtoad.com – a social networking site for creating and sharing recipes. They have a great recipe creator tool that does all the math for you. http://www.brewtoad.com/brewers/jbuffin • How to Brew by John J. Palmer – literally everything you would ever need to know • www.labelpeelers.com – where I buy all my ingredients. They’re in Tallmadge.
