Consultant Education Provided by Henny Penny Corp U.S. ENERGY STAR® Program • ENERGY STAR product types include: commercial refrigerators and freezers, as well as fryers, steam cookers and hot food-holding cabinets. • ENERGY STAR regularly updates its certifications. • Currently offers 48 rebates in 14 states. • Users can download the data into an Excel spreadsheet for further sorting or manipulation. • Live links to web sites for programs at sponsoring ESPs.

Consultant Education Provided by Henny Penny Corp ENERGY STAR Rating Qualifications • Gas and electric open fryers that have earned an ENERGY STAR certification are up to 25% more energy-efficient than standard models. • Gas fryers must have a minimum cooking efficiency of 50% with a maximum idle energy rate of 9,000 Btu/hour. • Electric fryers must be 80% efficient with a maximum idle energy rate of 1,000 watts.

(www.fishnick.com) • In 2003: Environmental Protection Agency set ENERGY STAR criteria for fryers. Several new models were developed to meet these criteria.

Consultant Education Provided by Henny Penny Corp Gas Fryers • Standard — Have atmospheric or “blue-flame” burners with simple heat exchangers that run through the frypot or underneath it. • Mid-range — Have atmospheric burner with heat-exchanger design so more heat is imparted to the oil than with a straight-through design by partly restricting the flow of hot flue gasses. • High-efficiency — Take advantage of new developments in gas technology, such as infrared burners, heat pipes, pulse combustion, powered burners and recirculation tubes.

Consultant Education Provided by Henny Penny Corp Advanced Electric Fryer Technologies Low watt-density elements • Provide an even distribution of heat to frying oil by spreading power across a greater surface area than standard cal-rod elements. • This enables the elements to create quick temperature recovery without scorching the frying oil. • Low watt-density elements used in many fryer designs.

Consultant Education Provided by Henny Penny Corp New Model Features/General Efficiencies • Filtration improvements. • Built-in filtration systems with no separate pumps or pans required. • Filter intake draws shortening from top and bottom so residue is minimal. • Reusable filter mesh and mobile trolley for oil disposal. • Paperless stainless mesh screen or an FDA-approved fabric envelope for filtering heavy debris. • Flow rate on filter pump and motor upgraded from 5.6 gpm to 8.0 gpm.
