  8. Holidays • ] Saint Patrick's Day (LáFhéilePádraig ) • Celebrated on March 17th • Celebrates the death of St. Patrick in the 5th century • People go to church in the morning and then feast for the rest of the day, people dance and drink. • The traditional meal of Irish bacon and cabbage

Recipes • Dublin Coddle • 1lb/ 500g best sausages8oz/ 250g streaky bacon1/2pt/ 300ml/ 1 cup stock or water6 medium potatoes2 medium onionssalt and pepper(serves four) Cut the bacon into 1in/ 3cm squares. Bring the stock to the boil in a medium saucepan which has a well-fitting lid, add the sausages and the bacon and simmer for about 5 minutes. Remove the sausages and bacon and save the liquid. Cut each sausage into four or five pieces. Peel the potatoes and cut into thick slices. Skin the onions and slice them. Assemble a layer of potatoes in the saucepan, followed by a layer of onions and then half the sausages and bacon. Repeat the process once more and then finish off with a layer of potatoes. Pour the reserved stock over and season lightly to taste. Cover and simmer gently for about an hour. Adjust the seasoning and serve piping hot.

Recipes • Corned Beef and Cabbage • 5 lb/ 2 kg joint of corned beef1 large cabbagebay leaf2 large onionscold water to cover2 large carrotsground black pepper4 potatoes(serves four to six) • Quarter the cabbage and put aside. Peel and slice the other vegetables. Cover the meat with the water and bring to the boil. Skim the surface, add the vegetables (except the cabbage), the bay leaf and the pepper and simmer gently for 20 minutes. Add the cabbage and cook for a further 30 minutes. Serve the meat surrounded by the vegetables with additional mashed potatoes.

  11. Tourist attractions • The Cliffs of Moher • Facing the Atlantic ocean, it is one of the highest cliffs in Europe. • The cliffs are still home to ancient buildings that were used to look out for invading Vikings • The sight is truly breathtaking.
