  4. What are proteins? These are made from combinations of any of twenty amino acids.

  5. What are fats and oils? These substances do not mix with water.

  6. What is a calorie? This unit represents theamount of energy it takesto raise the temperature of one gram of water one degree centigrade.

  7. What is cellulose? This carbohydrate cannot bedigested by humans but cowscan digest it because of bacteria that lives in their stomach.

  8. What is coagulation? A process that occurs when proteins are heated or exposed to acid causing them to unravel and develop thicker textures.

  9. What is ice? This unusual solid floats onits own liquid due to itsopen crystal structure.

  10. What is potential energy? This kind of energy is stored in some way.

  11. What is starch? Adding a solution of iodine andiodide to this substance produces a blue color.

  12. What are amino acids? Some of these molecules which jointogether to made proteins areacidic, some are basic and some are neutral.

  19. What are carbohydrates? These kind of molecules are prominent in potatoes, bread, rice and fruit.

  20. What are proteins? These kinds of molecules buildmuscles, hair, fingernails and are prominent in meat, eggs and cheese.

  21. What are fatty acids? These long chains of hydrocarbonmolecules have an acidic group at one end.

  22. What is a gram? This unit is used to measure mass in the metric system.
