  1. How to Make Japanese Soufflé Pancakes

  2. Conceived in Japan, a Japanese soufflé pancake is the perfect balance between a traditional pancake and a soufflé pancake.

  3. Back in the Asian island, this is a much-loved food item served during special and auspicious celebrations and occasions such as weddings. 

  4. Since it is a pancake; it can neither have the texture of bread, biscuit or a soufflé. It should be light, soft and fluffy with delicious flavor. 

  5. Already craving for it? Come; let’s prepare toothsome soufflé pancakes with the recipe mentioned below.

  6. INGREDIENTS: • 4 egg whites & 2 egg yolks – separated & chilled • Granulated sugar – 6 tablespoons • Vanilla extract – 2 tablespoon

  7. Baking powder – 1 tablespoon • Cake flour – 6 tablespoon • Milk – chilled – ¼ cup • Lemon juice – fresh – ½ tablespoon • Salt – ½ tablespoon

  8. Unsalted butter – greasing & serving purpose • Maple syrup – serving purpose • Confectioner’s sugar, whipped cream & fresh berries – serving purpose (optional)

  9. METHOD: • Place egg whites and yolks in separate bowls. Now add 1 tablespoon granulated sugar, baking powder and vanilla to the egg yolks and blend them perfectly. Once mixed properly, put in flour and milk. Whisk again until all the ingredients combine completely.

  10. Next add lemon and sugar to the bowl containing the egg whites. Whip the mixture for at least one minute, until it becomes foamy. Gradually sprinkle the remaining granulated sugar, along with whipping. Increase your whipping speed, so that the mixture turns stiff and double in size. But remember not to overdo the meringue.

  11. Heat a non-sticky skillet over the low heat. • Scoop 1/3 of the meringue into the mixture of egg yolk and fold it until combined. • Reap this with the remaining amount.

  12. Take care to grease the warm skillet along with the pastry rings with butter. Place the greased pastry rings in the warm pan and ladle a scant 1/2 cup batter into each ring. Cover the skillet with its cover and allow the soufflé pancakes to cook on low heat. Wait till it rises with bubbles on top.

  13. Remove the skillet cover and gently flip the soufflé pancakes in their rings. Replace the cover and allow it to cook again for 2 – 3 minutes. • Repeat the above two processes with the rest.

  14. Shift the soufflé pancakes into a platter. Drizzle and top them with maple syrup and other garnishing items, as per your preference. • Enjoy immediately, hot!
