  2. C.O.G. (Cost of Goods) • Cost of goods is what you pay for groceries. It does not include the tax of those items though. And as we all know taxes have been going up as well. • According to the CPI (consumer price index) over all food for the Institutional side will increase 2.5% to 3.5% for the year 2014. Add that to the 3.2% increase we hade in 2013 and you have a 5.7% to 6.7% increase in just two years. COG have increased 23% over the last 7 years.

  3. When your faced with increases like that it’s hard to stay in budget. Especially if your owners have not increased your budget accordingly. • History shows that the C.O.G.’s have not gone down, ever! • When I started in the business a good PPD was $2.25, now you have a budget of what?

  4. SO WHAT DO YOU DO? • First thing is you have to be ready to do things differently that what you have been doing. • Will a GPO save me? At best they claim to save you 2 – 5% as you can see that gets eaten up the first 6 months to a year.

  5. HERE ARE A FEW THINGS THAT WILL HELP

  6. OTHER WAYS TO CUT COST • Beverages are one of the highest cost, it’s ok to ask them what they would like to drink. • Desserts, if you have a PPD of $6.50 why would you spend $3.00 of that on dessert? You have to make it from scratch. • Thickners, buy in bulk.

  7. AND THE NUMBER ONE WAY TO CUT COST IS:CULTURE CHANGE! • Fresh cooked to order food. • No waste • Reduced inventory • Higher turn on products • Serve only what the guest orders. • Greatly reduces suppliments
