Volpi”; classe coinvolta: 2G - Scuola Secondaria di primo grado Per Cominciare 1. Ricerca della “Query”: Cosa serve per fare il pane? Pensa di essere un panettiere … e pensa a tutto quello che ti può servire. 2. Pensare e predisporre tutto il materiale (scheda studente, scheda alunno, scheda gruppi classe). 3. Cosa potrà mai chiedere un alunno? Che idea ha/si fa della panificazione? Risposte dei ragazzi: Chi fa lievitare il pane, ossia lo fa “gonfiare”? Il Lievito L’Acqua Le Uova L’impastare Se si chiama lievitazione, lo deve fare il LIEVITO! Meccanicamente inglobiamo aria! L’ACQUA evapora e si espande, al caldo sotto la coperta! Se uso il lievito per dolci la pasta lievita solo nel forno: E’ NECESSARIA UNA TEMPERATURA MAGGIORE!! Se tocco la pasta lievita si sgonfia, ma poi si rigonfia: DENTRO C’E’ L’ARIA
