  3. South America and Chilean Wine Regions

  4. Carignan Old Vines • The Carignan vines are old dry farmed bush-vines of over 80 years old. • Vineyards are located in the Melozal area, Valle del Maule. An area noted for its aridness and intense summer. It is nestled in the coastal ranges being much protected from both the coastal effects and the mountain effects.

  5. ECLAT 2007 VARIETY Carignan 65%; Mourvèdre 20%; Syrah 15%. VINIFICATION Grapes were carefully hand selected. Bunches were gently de-stemmed, and cold macerated for 48 hours before being inoculated with selected yeast. Fermentation takes places in a small stainless steel open top Fermenter for 7 - 10 days. During fermentation the skins cap is pushed by hand three times a day. There was post-fermentation maceration on skins for 14 days, before pressing. The wine was aged for 12 months in French (100%) oak barrels TASTING NOTES Colour: Dark intense red, with distinct violet notes towards the edges. Nose: Intense and complex, spices, fresh red fruits and slightly wild aromas of violet. Palate: Well structured wine, full bodied, soft tannins, lots of flavour, and vibrant refreshing acidity. Ageing Recommendations: Enjoy the concentration now or cellar for up to 8 years.

  6. Vinification Since the 90´s Valdivieso´s winemaking team has been looking for the best way to harmonise the old vine Carignan variety from the Maule Valley. First, was the ripeness and then the rustic structure of the early resulting wines. Now, we have found the way to extract the best expression of this variety.

  7. Malbec Old Vines Malbec Vineyards were planted in 1920 This vineyard is situated in a small valley nestled into the coastal ranges. North facing and protected from the cooling breezes, which flow up and down the Mataquito river; it is a very warm site

  8. MALBEC 2007 VARIETY Malbec 100% VINIFICATION Careful hand selection. Bunches were gently de-stemmed. Fermentation was in stainless steel tanks and lasts between 7 to 10 days. During fermentation the must was pumped over the skin cap three times a day. After alcoholic fermentation, there was post-fermentation maceration on skins between 7 to 14 days, before pressing. The wine was aged for12 to 18 months in French (100%) oak barrels of which 35% were new barrels TASTING NOTES Colour: Attractive vibrant dark violet-red. Nose: Intense wild berry fruits, fresh blackberries, blueberries, with a lovely lifted floral character. Palate: Intense exotic flavours with firm tannins that gives structure and length. This is well complemented with a fresh feel from the acidity, which balances the fruity character of the wine. Ageing Recommendations: Enjoy the concentration now or cellar for up to 7 years.
