Takrif Lemak dan Minyak Lemak dan minyak ialah lipid, iaitu sejenis molekul organik yang wujud secara semulajadi dalam organisma hidup Lipid paling ringkas ialah trigliserida Trigliserida ialah ester yang terbentuk daripada tindakbalas antara asid lemak dengan gliserol Asid lemak ialah asid karboksilik yang mempunyai rantai atom karbon yang panjang, antara 10 hingga 20 atom karbon. Gliserol ialah alkohol yang mempunyai tiga kumpulan hidroksil, -OH
