  2. Introduction • From the beginnings of civilization, humans have been dependent upon cows. • And, since the beginning, cows have lived in harmony with nature and people. • The cow has been the subject of myths, pop art, poetry, wonder, and worship.

  3. DAIRY BREEDS • AYRSHIRE: notable for being the only true dairy breed developed in the British Isles • BROWN SWISS: largest and most hardy of dairy breeds • HOLSTEIN: largest of the dairy breeds, black and white in color, developed in Holland

  4. DAIRY COWS, cont. • GUERNESY: one of the leading dairy breeds, producing milk with a high butterfat content • JERSEY: smallest of all dairy breeds, produces rich milk • SHORTHORN: produce an extra large quantity of milk

BOVINE BEHAVIOR • AGONISTIC (combat): this behavior includes fighting, flight, and other reactions associated with conflict • ALLELOMIMETIC (mutual mimicking): when one member of the group does something, another tends to do the same thing; and because others are doing it, the original individual continues • SHELTER-SEEKING: cows seem to sense the coming of a storm, at which time they may race about and “act up”

  6. BEHAVIOR, cont. • INGESTIVE: The first ingestive behavior trait, common to all young mammals, is suckling. • ELIMINATIVE: Nature ordained that if animals eat, they must eliminate. • INVESTIGATIVE: If they are not afraid, cattle investigate a strange object at close range.

  7. DAIRY NUMBERS • One quart of milk weighs 2.15 pounds • One gallon of milk weighs 8.6 pounds • 46 ½ quarts of milk equal 100 pounds

  8. MORE NUMBERS • 100 pounds of whole milk will yield approximately: • 10 pounds of cheese and 90 pounds of whey, OR • 5 pounds of butter and 90 pounds of skim milk, OR • 13 pounds of dried milk and 1 ¼ pounds of 40% cream

  11. IMPORTANT ANIMAL Pray tell me how would man exist without the cow? No milk or cream; nor any cheese; No butter for spuds or peas; No chocolate sundaes or parfaits; No fish or fowl with Hollandaise. No easy source of calcium to build the bones and please the tum; No ice cream cones or baked fondue, And no Welsh rabbit, pas de tout! No dishes loved by Aristotle; No baby’s formula or bottle; No steaming stews with oysters swimmin’, No big strong men or lissome women!
