The Successful Play • 11:00AM Tea Room open for Residents to view Salad Bar options • 11:15AM Beverage Hostess begins to serve beverages • 11:20AM ~ 11:30AM Hostess serves dining room from Salad Bar • 12:00N Hostess takes orders in Tea Room ~ Beverage Hostess continues to refill beverages • 1:00PM (ish) Associates begin to clear & clean dining after Residents have finished and left

Yards Gained • Plate waste decreased due to residents choosing their meals • Increase in family visits at meal time due to more pleasant meal service • Decrease in the number of residents eating in their room due to Salad Bar choices and enhanced dining experience Picture of two senior women setting at a diner table.

Defensive Issues Initial fears of increased costs decreasing bottom line profits. • 2005 ~ before Restaurant Style Dining food expense below budget $0.09 ppd • 2006 ~ 11 months into Restaurant Style Dining food expense below budget $0.29 ppd • 2007 ~ current food expense remains below budget $0.04 ppd
