Introduction • What is a carbohydrate? • What food contain carbohydrates? • Why patients are on a Consistent Carbohydrate diet? • Why count carbohydrates? • Grams and servings of carbohydrate in Consistent Carbohydrate diet. • Explaining hospital menu to patients. • Teach how to count carbohydrates. • Take a quiz to test knowledge.

  3. What foods contain carbohydrates? • Grains: bread, cereal, rice, pasta, and other grains. • Starchy vegetables (potatoes, sweet potatoes, peas, corn, and winter squash). • Beans and legumes. • Fruit and fruit juices. • Milk, soy milk, and yogurt. • Pastries, jam, ice cream, sherbet, and syrup.

Starch • 1 slice of bread • 1 tortilla • ¼ large bagel • 2 taco shells • ½ hamburger or hot dog bun • ¾ cup ready to eat cereal • ½ cup cooked cereal • 1 cup broth-based soup • 4-6 small crackers • 1 serving of casserole • 1/3 cup pasta or rice (cooked) • ½ cup beans, peas, corn, sweet potatoes, winter squash, or mashed or boiled potatoes (cooked) • ¼ large baked potato • ¾ oz pretzels, potato chips, or tortilla chips • 3 cups popcorn (popped) 1 carbohydrate serving = 15 gram CHO

  9. Fruit and Fruit Juices • 1 small fresh fruit (4 oz) • ½ cup canned fruit • ¼ dried fruit (2 tbsp) • 17 small grapes (3 oz) • 1 cup melon, berries • 2 tbsp raisins • ½ cup fruit juice 1 carbohydrate serving = 15 gram CHO

  10. Milk/Yogurt • 1 cup fat-free or reduced fat milk • 1 cup soy milk • 2/3 cup (6 oz) fat free yogurt sweetened with sugar free sweetener 1 carbohydrate serving = 15 gram CHO

  11. Sweets and Desserts • 2 inch square cake (unfrosted) • 2 small cookies • ½ cup ice cream or frozen yogurt • ¼ cup sherbet or sorbet • 1 tbsp syrup, jam, jelly, table sugar, or honey. • 2 tbsp light syrup 1 carbohydrate serving = 15 gram CHO

  12. Test 1 • ¾ oz potato chips • 1 sandwich • 2 slices of bread • Ham • Tomato • Lettuce • Pickle • 1 serving = 15 gms • 2 servings =30 gms • Total = 45 gms
