  1. 精白米及不同量米麩對大白鼠體內膽固醇代謝的影響精白米及不同量米麩對大白鼠體內膽固醇代謝的影響 • 本實驗目的在於探討台農67號稻米之精白米及不同量米麩纖維對大老鼠(Wistar 品系) 膽固醇代謝的影響。雄性大白鼠約280g,隨機分為八組,再分兩大組供實驗Ⅰ及Ⅱ。實驗Ⅰ:以玉米澱粉為醣類來源是玉米澱粉組、精白米取代玉米澱粉為精白米組,各添加1%膽固醇的玉米澱粉加膽固醇組及精白米加膽固醇組。實驗Ⅱ:精白米加膽固醇組其纖維來源為米麩,依含量分為2%米麩組、5%米麩組、10% 米麩組及20% 米麩組。實驗Ⅰ及Ⅱ皆進行四週後取下腔動脈血、肝臟,並收集最後一週的糞便,以供分析血清膽固醇、三酸甘油酯及總脂質,肝臟總膽固醇和總脂質,糞便中酸性及中性固醇。結果發現飼料中含1%膽固醇會促肝臟總膽固醇及總脂質增加,並增加糞便總中性固醇及酸性固醇排出。而精白米比玉米澱粉有較低的血清總膽固醇,及促進糞便中總膽酸排出,但不會增高糞便中總膽酸排出濃度。而米麩添加量會增加糞便總膽酸排出,且也能稀釋總膽酸排出濃度。因此由實驗結果顯示,精白米可以有效減少血清總膽固醇及增加總膽酸的排出,有利於體內膽固醇的排除,米麩則可以抑制營養素的吸收消化及增加總膽酸的排出,但對體內膽固醇的影響並不明顯。
