Fats are the most common energy storing molecule • 9 cal/g • Carbohydrates and Proteins have 4 cal/g • The most common fat in human life is the triglyceride • 3 fatty acids and one glycerol molecule • Fatty acid chains are usually 16 - 18 C’s long • Fatty acids are bonded to glycerol through condensation reaction through an ester linkage • The process is called esterification • Fig 19 pg 37

  4. Phospholipids • Cell membranes • Phosphate head is polar • Tails are non-polar • When added to water they form micelles - spheres where the polar head dissolves in the water and the tails are attracted to each other to form the ring • Pg 38 Fig. 20

  5. Steroids • Located in cell membranes • Four fused hydrocarbon rings and several different functional groups • Cholesterol - embedded in membranes • Can be converted into many substances • Vitamin D • Bile salts • Sex hormones are also steroids • Fig 23 pg 39
