Food Service & Hospitality Industry– Cornerstone of the American Economy • The restaurant industry is projected to employ 13.1 million people in 2013 • 10% of the workforce • Restaurant industry job growth outpaced the overall economy in 13 consecutive years, from 2000-2012 • Job growth in restaurants was nearly triple the rate of job growth in the nation’s economy. • There are now 980,000 restaurant locations in America. • Restaurant Industry sales are projected to total $660.5 billion in 2013 —4 percent of the nation’s GDP.

Food Service & Hospitality Industry– Cornerstone of the American Economy • ½ of ALL adults have worked in a restaurant • 1 in 3 first jobs are in a restaurant • 13.1 Million People Employed in 2013, 14.4 Million by 2023 • $2,620 Average Household Expenditure for Food (49%) away from home in 2011 • 59% of managers are women, 18% were black or African-American and 15% were of Hispanic Origin • Black Owned increased by 188%, Hispanic 80%, Asian 60% (1997-2007) Source: National & California Restaurant Associations

Student Uniform –Back of House • Chef coat, chef pants, chef hat provided by NPHS on check-out basis. • Student is responsible for uniform. • Student provides black leather or other non-fabric, non-absorbent material, slip and oil resistant food service shoes by Sept. 13. • Wear / store athletic shoes to class each day until you purchase shoes

Student Uniform – Front of House • Black crew socks • Long black pants (wrinkle resistant) – Dickies or Dockers • Black belt to fit pant with discrete buckle – nothing large, showy, flashy • Long sleeve, white, button-down dress shirt (cotton/polyester blend or wrinkle resistant) • Short sleeve, white undershirt • Tie

Internship = Industry Experience • Sub term 4 (April 29 – May 30) • Students obtain restaurant site by March 28. • Students who do not have an internship site must drop the class • Not all students may qualify for an internship • Internship is during Per. 3 class time (limited internships available after school) • Students / parents provide transportation • Students cannot ride with another student • Pull-back day each week an set days, there will be a calendar

Certificate of Proficiency & Majors Program Recognition • Complete 2 terms • 90% or better for final grade each sub term • Participate in Panther Café and Catering Activities (only miss 1 each) • 2 or fewer absences during each sub term • 3 or fewer tardies during each sub term • Demonstration of accurate knife cuts and 90% or better on knife skills exam • 85% or better on quarterly final exams • Complete internship hours and receive superior rating • Pass and receive ServSafe Food Handler Certification • Excellent work ethic and attitude. • 90% or better on completed Professional Portfolio

FHA-HERO – Where HECT Gets RED!!! • A pre-professional career-technical student organization for students enrolled in HECT courses in grades 6-12 • Sponsored by the CA Department of Education • Leadership, citizenship and career development • Approximately 4,000 members in middle, junior and senior high schools and ROC/P’s • The NPHS FHA-Chapter with 200 members is the largest in Reg. 9 and the second largest in the state. We are a 100% Chapter. • All students in our program are affiliated and 15% of their grade = FHA-HERO Leadership Points • HECT Standard 9 – Leadership & Teamwork
