  1. Restaurants And Preferences Most people go to restaurants to treat themselves and their families to something special, a meal they may not otherwise prepare at home. That is why seafood restaurants are often popular. All over the world there are choices of fine restaurants. Some serve Italian dishes such as pasta and pizza, others operate as steakhouses that serve red meat and chicken, whereas others may decide to concentrate on seafood only. Then there are those that serve all of the above – and more. PREFERENCES Some people will not eat red meat and/or chicken, but they may enjoy fish. These people are known as pescatarians: they follow a vegetarian lifestyle, but they do allow for fish in their diet. Seafood restaurants cater to all that eat fish, pescatarians as well as the rest. Some restaurants market themselves as seafood restaurants exclusively, whereas others will also offer other options such as meat, chicken and other dishes. The seafood restaurant is discerned from others simply because they specialise in fish and shellfish. Seaside towns and cities normally have a choice of seafood restaurants, and some of them may actually include freshwater fish on the menu. PREPARATION Some seafood restaurants may offer their customers meals made from frozen fish. This is often the case in restaurants quite far from the ocean and where it may be difficult to get fresh fish from a supplier regularly. Even in seaside cities frozen fish is not unusual. However, those restaurants that set store by freshness, and by supporting local businesses and the local fishermen, are very unlikely to offer fish that was frozen and then cooked. They will go to trouble to buy directly from the fisherman, or from a supplier that acts as middleman between the fisherman and the client, such as the restaurant. In many seaside villages – even in cities – restaurant owners buy from the fisherman as they pull into the harbour or jetty (obviously depending on laws, bylaws and what is permitted by the local authorities). DIFFERENT TYPES OF SEAFOOD RESTAURANTS Many of these restaurants that serve seafood exclusively offer a much greater selection than you would find in a fast-food outlet, and they are often prepared and served with greater care and more choices of sauces, for example. Some of them follow a theme and hang old (or new) fishnets, or they place buoys and other objects that remind of the seas throughout the restaurant to add to the ambience. Many of them are located in the harbour or marine areas of cities. Some are situated to offer great views across the ocean, adding to their appeal. There are also those seafood restaurants that combine other types of cuisine with what they offer you from the sea. Some offer their customers several choices, right from red meat and chicken to fish and shellfish. They are often popular as they tend to cater to many tastes so that all feel welcome. One day you order steak – the next halibut or cod. A FEW EXAMPLES The restaurant you visit may offer both sea and freshwater fish, they may offer both frozen and fresh fish, as well as a selection of shellfish, lobster, crab, mussels, oysters – and more. Staff know their menu well and are always able to assist those clients that may have questions about certain fish and options. Good seafood restaurants normally employ knowledgeable, experienced managers and other staff. STARTERS AND MAIN COURSES If you visit a good seafood restaurant in, say, Swansea, and you are keen to sample some Spanish-inspired tastes, you may want to look at the menu of restaurants and hope to see some of the following options there: langoustines in a Spanish port and garlic sauce, or pan-fried scallops, or calamari strips. As a main course you may consider lobster in a thermidor sauce, or sea brass, or bream, or snapper, halibut or swordfish, and so many more. Good seafood restaurants offer these choices among a great selection. Eating out is often a treat, provided you find a great restaurant near you, whether they serve only fish, or other meals as well.
