Heat a wok on high flame and put some cooking oil into it by pouring and then swirling it around. Reduce the flame to medium. Add all the prawns into the wok and stir-fry the mix for a few seconds. Take out the prawns and drain out most of the oil but keeping a little. Now make the flame high again and add chopped spring onion, ginger, dried red chilli and garlic into the work and stir fry all the items till the oil becomes rich red in color and becomes deliciously aromatic. • • •
