  2. So what is ghee? • Regular butter contains butterfat, milk solids and water. Clarified butter is butter that has been boiled to remove the water & milk solids. • Ghee is a type of clarified butter that retains the milk solids (the water is still boiled off) and simmers longer with the remaining butterfat to caramelize. It gives a rich nutty taste. Desi ghee is used in traditional Indian and southeast Asian cooking.
