  1. Picante Kashmiri Rogan Josh Recipe The first two Indian dishes that come to anyone’s mind when we think of fresh mutton are Laal maas and Rogan Josh. The first one is known for the fiery hot taste, but the other one is from the beautiful heavenly state of Kashmir that all can enjoy. Both are from different regions but have one thing in common, red meat. If you are yet to plan your dinner menu for tonight, give our Rogan Josh recipe a try. Trust me, it’s worth all the effort! Preparation time: 20 mins Cooking time: 50 mins (Or less if using a pressure cooker) Total time: 1 hour 10 mins Ingredients ●1 kg Fresh Mutton curry cut ●2tbsp Ghee + 2 tbsp oil ●5 medium-sized onions finely sliced ●2 tsp ginger garlic paste ● 2 tbsp Kashmiri red chili powder ● 1- 1.5 tsp saunf powder ● 1/2 tsp saunth (dry ginger) powder ● 1/2 cup Dahi (optional) ● 1.25 cups water ● pinch of saffron (optional) ● salt - to taste ● A handful of chopped coriander leaves for garnish Garam masala ●1 small Cinnamon stick ●3-4 cloves ●2-3 green cardamom ●1 Tsp Cumin Seeds ●1-2 Black Cardamoms ●1-2 bay leaf Method 1.Lightly roast the whole garam masala in a kadhai (leave out black cardamom and bay leaf). Let them cool and grind them in a dry mixer. 2.Take a small bowl with Kashmiri chili powder, saunf powder, and saunth powder and make a paste with little water. 3.Take a large, heavy-bottom pot, heat oil, and ghee on medium heat. Put the black cardamom and bay leaf and let them crackle. 4.Once roasted, add sliced onion and keep stirring till they are light golden brown. Keep the heat medium and keep going to save them from burning; it could take up to 10 minutes to get the right color.

  2. 5.At this stage, add the ginger garlic paste and cook for a few minutes. 6.Add mutton now, and sear it from all the sides. 7.Once browned from all the sides, add the dry masala paste that we prepared. 8.Add whisked Dahi and saffron at this stage. (optional) 9.Stir well and let the mutton cook for some time. Season with salt, and you can add ½ a cup of water to loosen the curry. 10.Transfer all the curry to the pressure cooker and let it cook for 10-15 minutes on medium heat. 11.When you open the cooker, you will notice that the mutton is soft, and the oil is separated on top. This indicates that the masalas are well cooked. 12.At this stage, add the dry garam masala powder and cook for few minutes with the open lid. 13.Garnish with chopped coriander and serve hot with boiled rice or roti.
