  3. THE BALTIC COUNTRIES • THE BALTIC COUNTRIES ARE: • Estonia • Latvia • Lithuania These countries are in the northeastern part of Europe on the Baltic Sea. Potatoes are so basic they are called the “_____________________________”

  4. KRINGLE These folks also like sweets. In Latvia they celebrate birthdays with festively decorated kringle, which is a rich, yeast oval shaped or pretzel-shaped coffee cake. Some have fruits and nuts.

The Central Countries • These countries are: • Poland • Czech Republic • Slovakia • Hungary The cuisine in these countries have a strong Slavic influence, but their warmer climate and their close proximity to Western Europe also has significant influences on the food as well. What do you know about the Slavic people and culture?

  7. BIOGOSAKA POLISH NATIONAL DISH This is a sweet and sour POLISH stew. Ingredients include sauerkraut, pork, apples, cabbage and kielbasa.

  8. KIELBASA A POLISH SMOKED SAUSAGE FAMOUS IN THE UNITED STATES TOO.

  9. KOLACHE Poland, the Czech Republic, Slovakia and Hungary share a long baking tradition. KOLACHE is a Czech type of pastry with fillings such as fruits, cheeses, fruit butter, nuts, or poppy seed paste.

  10. The Balkan Countries The countries include: Slovenia, Croatia, Yugoslavia, Bosnia, and Herzegovina, Serbia, and Bulgaria, Macedonia, and Albania. They have many cultural influences. There is a large consumption of meat in the Balkan diet. In the southern region of Balkan countries their diet is much like the Mediterranean diet.

  11. Ukraine, Belarus and Moldova Northeast of the Balkans and west of Russia these independent countries were once part of the Soviet Union. In these regions bakers prepare numerous light breads in various shapes. A wedding bread might be ornamented with doves. On Christmas Eve one specialty is kutia, boiled wheat groats mixed with poppy seeds, honey, and nuts.

  12. The Caucasus • These countries are: • Georgia • Armenia • Azerbaijan • This region is named for the Caucasus Mountains that separate Europe from Asia

  13. PILAF Sautéed grains typically rice and bulgur cooked in a seasoned liquid with dried fruit and nuts or strips of meat.

  14. Central Asian Countries These countries are: Kazakhstan, Uzbekistan, Turkmenistan, Kyrgyzstan, and Tajikistan. These are technically part of Asia but share many features with the cuisine of Eastern Europe and Russia. Mutton (Lamb) is a common meat for their main dishes.

  15. Foods of Russia Russian food dishes reflect the practical cooking of th4 Slavs, the Vikings, and the Mongols. Some French influence because of Peter the Great. Grains are basic to Russian cuisine. Bread is eaten at every meal, sound familiar? Russian Black Bread: moist rye loaf flavored with chocolate, caraway, coffee and molasses.
