COATING AND TEMPERING CHOCOLATE • Candy Coatings (compounds, wafers) are made from a delicious special compound manufactured by Merckens Chocolate Co. and are designed for melting, molding and dipping. Compound chocolate, also known as confectioner's coating or dipping chocolate doesn't require tempering because it is made with a trans fat free fractionated palm oil in place of cocoa butter. Cocoa butter is in all chocolate and this is the natural fat from the cocoa bean. Chocolates with cocoa butter require tempering when melted and reformed to allow them to look shiny and have a nice snap. Compound chocolates on the other hand have the cocoa butter replaced with a palm fat so you can just melt and work with no need to temper.

  6. COLORING • Strong, bright, vivid colors that are highly concentrated in a gel base. They blend faster and are easier with less mess. 36 different selections. Made by AmeriColor. Peanut free, tree nut free, gluten free, vegan and kosher.   Water-based food coloring should not be used with chocolates - water and oil don't mix!

Hard centers like coconut and peanut butter  and ; semi-soft centers like peppermint, strawberry, raspberry, cherry, and caramel     • Our Squeeze-ums are prepackaged filings that are so easy to use, just like piping and come in multiple flavors.

LOLLIPOP STICKS • Our standard white lolly paper sticks are produced using a high quality, special grade white paper in compliance with the USFDA & made solely from virgin pulp, containing no recycled content.  Our paper sticks are made exclusively in the USA, Lollipop sticks are offered in various lengths.

PACKAGING • We offer candy boxes with and without windows, truffle boxes, plus candy trays and pads that add additional protection and professional touch.  We are one of the few distributors who carry specialty chocolate boxes with inserts that match exactly with some of our unique molds. • Our Cellophane "Cello" bags are made out of FDA approved 1.2 polypropylene (Cello).   These gusseted bags have sides that expand making a better fit for lollipops and a better presentation for candy bags

FLAVORINGS AND EXTRACTS • Candy oils, also called flavoring oils, are concentrated - super strength - flavors that have the intensity to withstand the higher temperature demands of candy making, but can also be used to flavor just about anything from baking to beverages.. These ols are very concentrated and only a few drops with provide you the desired results. • Flavoring extracts are usually made by literally extracting the flavor of the source ingredient into a liquid base,  They are not as strong as the oils • Flavoring oils and extracts can be easily substituted for one another in most recipes. Since flavoring oils are so much more concentrated, you only need a few drops in place of a teaspoon of extract. These super-strength flavors are 3 to 4 times stronger than grocery store extracts - a little goes a long way! Perfect for use in hard candy, candy centers, fondants, fudges, and other baked goods. Gluten Free and certified Kosher Pareve by Star-K.

  12. HARD CANDY MIXES AND ISOMALTS • Hard candy mixes are ready to use, just melt, add flavoring and your ready to pour.   Isomalt Crystals are a reduced-calorie sweetener used for making hard candy. Can be used to make edible gems, pulled sugar, blown sugar and as a sugar substitute in baking.

HARD CANDY MOLDS • Professional quality Hard candy  lollipops and shaped pieces can be produced with our large selection of  candy molds.  These molds are especially manufactured with a durable plastic that can withstand the high temperatures of candy making.  They can withstand temperatures of about 350 degrees and can be used with isomalt and chocolate also.
