  2. How Kimchi is made… • 1 Napa Cabbage • 3 carrots • 2 cucumbers (SHHH!!) • 3 heads of broccoli (really….) • 2 bunches of scallions • an apple • 2 small oranges • and a lemon • unrefined rice vinegar Basically, you add a bunch of foods are put in a pot and. Add spices and chili paste.

  3. The Bacteria • There are around 200 bacteria isolated in kimchi, the important microorganisms in kimchi fermentation are known to be Lactobacillus plantarum, L. Brevis, Streptococcus faecalis, Leuconostocmesenteroides, and Pediococcuspentosaceus. Most kinds of bacteria belonging to the genus Lactobacillus have been found to be present in kimchi
