Grading of Eggs • Grade is determined by interior and exterior egg quality. • Grade is designated by letters : AA, A, B. • AA is the best grade. • There is no nutritional difference between the grades. • Most B grades are used by institutional egg users and never make their way to the grocery store.

  3. AA • Clean, no cracks, correct shape • Albumen tight around yolk • A • Mostly good, clean • Albumen a little spread out • B • Not clean, misshapen • Albumen spread out, flat yolk EGGS

  4. Sizing of Eggs • Egg size is determined by weight. • Each carton contains eggs of similar weights. • Grade quality and weight are not related. • 6 sizes of eggs: Size Weight

  6. Candling= shine bright light through egg Identify defects • Yolk Color • Blood Spots • Size of air cell • Embryonic development Internal

  7. Blood Spots *Capillary burst in reproductive system *Doesn’t mean embryo is growing

  8. Larger = older Air Cell Size New Eggs= Float Old Eggs= Sink
