Here’s what you’ll need to make this easy-peasy recipe! ingredients For the cinnamon tea cake: 1 ½ cups all-purpose flour 2 tsp baking powder ½ tsp ground cinnamon 2 Teapigs Apple and Cinnamon tea bags ½ cup butter (unsalted and softened) ¾ cup granulated sugar 1 tsp pure vanilla extract ¼ tsp salt ½ cup milk 2 large eggs Instructions: Step 1: Start off by preheating your oven to 175°C and greasing a 9-inch round cake pan. It's also advisable to line the pan with baking paper, so it’s convenient to remove the cinnamon tea cake when it’s done. Step 2: In a medium-sized mixing bowl, sift together the all-purpose flour, baking powder, salt and ½ teaspoons of ground cinnamon. Set this dry mixture aside. Step 3: Pour milk into a saucepan and set it on medium heat. Infuse it with tea leaves obtained by cutting open the teapigs tea bags. Once the milk starts to simmer, take it off the heat. Finally, strain the infused milk – it’ll be used later to boost the taste of your cinnamon tea cake. Step 4: Use a large mixing bowl to cream the butter and sugar together to get a lighter and fluffier mixture. Use an electric mixer to get it done in around 5 minutes. Step 5: Add an egg and whisk it, ensuring it’s fully incorporated. Then add the next one and whisk again to incorporate. Stir in the pure vanilla extract. With that, the wet mixture for your cinnamon cake recipe is ready. Step 6: Now, gradually incorporate the dry mixture into the wet mixture. Add 1/3rd of the dry mixture and then alternate it with half a portion of the infused milk. Start and end with the dry mixture. Blend the mixture only until everything is incorporated – taking care not to overmix. Step 7: Evenly spread the cake batter after transferring it into the pan. Step 8: Finally, bake in the oven for around 40 minutes or till the toothpick test confirms it for you. Step 9: Once the cake is done, it must be allowed to cool down for about 10 minutes. Then, let it cool completely by placing it on a wire-rack. Step 10: Now, it’s time to prepare the cinnamon topping. You can prepare that by combining sugar and cinnamon powder in a bowl. First, brush the melted butter over the warm cake and then add the mixture evenly over it. Step 11: That’s it! Now slice your cinnamon tea cake into eight equal portions and serve it with your favourite cup of tea.
