  1. THE SECRET TO MAKING LUSCIOUS ICE CREAM Ice cream is one of those food marvels that is truly divine and makes one hopelessly indulgent. For me no matter when, a bowl of fruit filled, creamy and nutty ice cream is always as seductive as one can imagine, but a great number of people would like to reserve this dessert delicacy for summer. It’s a very tempting sight and awesome eating. Rounded sweet and creamy mounds served in a cup, bowl or cone with a large variety of flavors melt in the warmth of the mouth and create incredible gourmet delight.

Any place or park where families visit in the evening for a relief from the heat of the day is featured by icecream handcarts doing brisk business. Ice cream preparation, however, is a speciality job which needs proper ingredients in the right proportion and skill to make it palatable, not to forget the clever use of air to make perfectly whipped cream.   3. The composition of ice cream can be broken down to five main ingredients - milk fat, milk solids-not-fat, sweeteners, stabilizers & emulsifiers and flavors. Milk fat consists of milk, cream and butter which brings creaminess and richness to ice cream and contributes to its melting characteristics. While in general the percentage of milk fat is at least 10% of the total composition, it can go up to 16% in premier brands. Milk solids-not-fat consists of other solids that include cream, condensed milk, evaporated milk , dry milk and whey protein ranges from 9-12% of the body of the ice cream. This component plays an important role in forming the body and texture of ice cream by stabilizing the air that is incorporated during the freezing process. Sweeteners provide the characteristic sweetness of ice cream. They also help to lower the freezing point of the mix so that the mix remains soft enough at the serving temperature for easy scooping and eating. Sweeteners include sugar(sucrose) and corn syrup. Stabilizers in ice cream are the premixes used to increase thickness and viscosity of ice cream and prevent ice crystallization. This firstly ensures that the ice cream remains stable for some time after serving for licking and eating pleasure, and secondly they prevent formation of large crystals on the ice cream during freezing. This saves the ice cream from being coarse, icy and unpleasant to eat. Emulsifiers for ice cream ensure that the milk fat is evenly spread in the ice cream during freezing and storage. This helps retain the stability of air incorporated in the ice cream to provide a smooth eating experience till the end.
