  3. Talking about some Thai dishesTourist : This red thick soup looks interesting. What’s it called?Guide : This is “Kaeng Phet Nuer” or red curry with beef. It is a popular dish among Thais.

  4. Tourist : And what about that green curry?Guide : That is called in Thai “Kaeng Khiau Wan Kai” or green curry with chicken.

  5. Tourist : Another popular Thai dish, I suppose.Guide : You’re quite right. Curry dishes are very popular among the Thai people. I should say Thai meals would not be complete without curry dishes.

  6. Tourist : I must try it now. Um, it’s delicious, although it’s rather hot for me. What’s in it? Guide : Well, it consists of coconut milk, a curry paste, which must be prepared before hand, and a meat of your choice. This can be beef, chicken, duck, pork or fish. In Thai curries the coconut milk gravy or “Nam kaeng” must be rich and oily, not thick and dry.

  7. Tourist : Where dose the red or green colour of the gravy come from? Guide : That’s a good question. No artificial colours are used. When you make the red curry paste, you use dried red chillies. But when you make the green curry paste, you use the finely chopped, fresh green chillies.

  8. Tourist : How I love to prepare the curry paste! What’s in that? Guide : It basically contains chillies, onion, garlic, some spices and herbs.

  9. Tourist : Can you write the recipe for me? Guide : I’ll have you check a Thai recipe book because I usually buy a ready-to-mix curry paste myself. However, I Will remember to give the recipe to you tomorrow.
