  2. How does it work? • Food and beverage industry follows changes in travel modes, travel opportunities, destination development, work patterns and demographics

  3. Why? • People have been eating in common areas for thousands of years. • French culinary practices have influenced food all around the world.

  4. Format • The Format of a restaurant is it’s structure. • What are some examples of different formats? • Cart • Truck (eat outside) • Other vehicles (eating inside) • Building • Stand

  5. Format • The modern concept of the restaurant originated in france in the 18th century (1700-1799) • Greasy Spoons • Fine dining • Fast food • Cafeterias • Theme dining (just to name a few) • They serve both tourists and locals

  6. Customers are attracted to service formats that attract their needs at a given time. • What kind of a tourist (or tourism activity) might need something quick and easy? • What kind of a tourist/activity might have the ability to get something more classy?

  7. The market place is changing, and food service industries must always adapt to stay current and profitable.

  8. Segments in the Food Service Industry • Food service in Accommodation Facilities • Stand Alone Restaurants • En Route Food Services • Catering • Entertainment Concepts • Clubs • Other

Accommodation Facilities • Restaurants in accommodation facilities do not need to be as competitive as stand alone restaurants. • Why? • Overnight guests have fewer options and cannot go home. • Several departments: Room service, bars/lounges, catering, dining rooms, cafes, vending machines, etc.

  10. Stand Alone Restaurants • Most visible • Examples: • fast food • family style • theme restaurants • Chain restaurants • luxury establishments

  11. En Route Food Services • Obviously patronized by travelers, but there are always locals who show up too. • Usually low to moderate prices • We can find these: • On highways • In terminals at airports • In hotels

  12. Catering • Requires a lot of planning, and is usually patronized by business travelers or conference attendees. • Private catering companies, restaurants, and hotels can all provide this service.

  13. Entertainment Concepts • Designed around a central theme or show. • Dinner theatres • Hard rock café • Sports bars

  14. Clubs • Not dance clubs, but members only clubs • Some provide only food • Some provide food with other services, like golf or pools or what-have-you. • Country clubs • fraternities

  15. Other! • Some places provide food as a side note because there are already people there. • Examples? • Food courts in malls • Department stores (GCB in the Bay) • Cafeterias • Chains like McDonalds • Convenience stores

FOOD SAFETY • Food establishments can be very dangerous if people aren’t consciously trying to keep their operation clean. • Many foods need to be kept/served at a certain temperature to stay safe • Cooks/ servers need to constantly wash their hands to make sure the food they are serving does not get contaminated.

  17. Food Trends • BYOW/THTR • Eating Local • Organic • Vegitarian/Vegan • Atkins/other diets • Smoke Free • Trans Fats/ other bad things

  18. Success? • The key to success is to know your customers. • Listen to what they want and give them the best product you can.
