What Are Trans Fatty Acids? • The name refers to a type of double bond that occurs in fatty acids • Some TFA’s occur naturally (i.e. animal fats) • Treating liquid oils with hydrogen (hydrogenation) creates TFA’s • Fully hydrogenated oil does not contain TFA’s • Partially hydrogenated oil does contain TFA’s • What are the benefits of hydrogenation? • Improved fry life • Extended shelf life • Flavor stability • Improved product performance

What Is The Concern With TFA’s? • TFA’s tend to raise total blood cholesterol levels • Possible correlation between TFA’s and elevated LDL (bad) cholesterol but reduced HDL (good) cholesterol • Some studies have established a possible link between TFA’s and the risk of heart disease • Trans fat must now be listed on nutrition labels; as a result, consumer awareness of trans fat is increasing • Local governments are moving to ban trans fat in foodservice operations (NYC)
