Idli and the coconut chutney and sambar is the best combination for tiffin. • Even though many of us know do normal sambar recipe, we feel that we couldn’t do the restaurant style recipe. • For this idlisambar recipe, we need to make the sambar powder first which adds extra taste to the recipe. • For this, in a heated frying pan add mustard seeds, coriander seeds, cumin seeds, pepper, chanadal, fenugreek seeds and stir well. • After few minutes add dried red chillies, curry leaves and fry well. Stir them until they get nicely roasted and the spices turn aromatic.

When you can feel the aroma nicely you can add few coconut pieces with it and after few minutes switch off the flame. • You can skip coconut if you don’t like it. • Grind these spices after they have cooled into a fine powder. • That’s all. • Your sambar powder is ready. • You can also use this sambar powder for other South Indian Recipes too.

For making sambar first, take a lemon sized tamarind and soak it in warm water for 20-30 minutes. • And also cut pieces of vegetables of your choice like carrot, beans, radish, yellow pumpkin, drumstick, onions, tomatoes, brinjal, ash gourd, potatoes and so on. • You can choose few from the above list but don’t forget to add drum stick since it adds more flavour to the idlisambarrecipe. • Add tuvardal and masoordal in a pressure cooker, add ¼ teaspoon of turmeric powder and add 1.5 cups water.
