Apple Crumble Cocktail • 35ml/1¼fl ozMacallan Gold • 1 tbsp apple liqueur • 2 tsp lemon juice • pinch mixed spice • 1 tbsp Bramley apple sauce • dash sugar syrup • 1 tspbramley apple sauce • 1 digestive biscuit, crushed • Place all the ingredients in a cocktail shaker with a handful of ice and shake hard. • Strain the cocktail into a tumbler filled with crushed ice and garnish with a teaspoon of apple sauce and a sprinkling of the biscuit. http://www.bbc.co.uk/food/recipes

Old Fashioned Whisky Cocktail • 1 sugar cube • 1 strip orange peel • 2 dashes Angostura bitters • 50ml/2fl oz Bourbon whisky • twist of lemon peel and maraschino cherry, to garnish • Place all the ingredients in a cocktail shaker with a handful of ice and shake hard. • Strain the cocktail into a whiskey tumbler filled with ice and garnish with a lemon twist and a maraschino cherry. http://www.bbc.co.uk/food/recipes

New York Sour • 1 free-range egg white • 50ml/2fl oz bourbon • 25ml/1fl oz fresh lemon juice • 2 tsp sugar syrup • splash ruby port • Place all the ingredients except the ruby port into a cocktail shaker with a handful of ice and shake hard. • Strain the cocktail into a tumbler over ice. • Pour the ruby port carefully on top, so that it floats.
