  2. If donut holes are so popular, why can’t we buy bagel holes?” The answer to this is quite simple: Doughnuts are cut from a continuous sheet of dough. Two rings—one that forms the outline and the other that creates center holes—are cut into that sheet before the dough is fried. Bagels start as slightly irregular strings—a hot dog-like shape—and are wrapped around a mandrel, a metal bar that helps form the distinctive bagel shape. (Feldman 100)

  3. David Feldman asks the hard questions like, “Since doughnut holes are so popular, why can’t we buy bagel holes?” The answer to this is quite simple. Donuts and Bagels are different beasts. Feldman states: Doughnuts are cut from a continuous sheet of dough. Two rings—one that forms the outline and the other that creates center holes—are cut into that sheet before the dough is fried. Bagels start as slightly irregular strings—a hot dog-like shape—and are wrapped around a mandrel, a metal bar that helps form the distinctive bagel shape. (100)

  4. But, it is not a completely unreasonable idea to make spherical bagels. Bagel expert Tom Lehmann considers, “It would be entirely within the production capability of most bakeries to create ‘Bagel holes’” (qtd. in Feldman 100).
