  1. Pay Homage to a Pizza Champion with This Smoked Ham and Cheese Pizza

  2. This recipe makes 8, 6 cm (2.4 in.) personal pizzas • Prep time: 20 minutes • Cook time: 10 minutes

  3. You will need • One recipe fresh pizza dough. • ½ recipe pizza sauce. • 3 tablespoons grated cheddar cheese. • 3 tablespoons grated mozzarella cheese. • 2.5 ounces (70 grams) shredded smoked or double-smoked ham. • 1 tablespoon onion confit. • 1 tablespoon Italian (flat leafed) parsley, chopped. • Some course semolina flour, for dusting.

  4. Method • Put your pizza stone or heavy pizza pan in the oven and set the oven to 480 degrees Fahrenheit (250 degrees Celcius). • Dust a clean work surface with the semolina flour and roll the pizza dough out until it is flat round approximately 30 cm (11.8 in.) in diameter.

  5. Use a 6 cm (2.4 in.) cookie cutter or something similar to cut out 8 small pizza bases from the dough. Place the rounds on a tray and prick them thoroughly with a fork. • Cover the pizza rounds with pizza sauce and then sprinkle the cheeses, ham, parsley and onion confit on top.

  6. Put the mini pizzas on your now-hot pizza stone or pizza pan and bake them for six minutes or until they are crisp and golden-brown. • You can serve these miniature thin-crust pizzas with salad for a fairly light luncheon or get the children involved for some pizza family fun. Children love individually-sized foods and will probably be delighted to “help” with rolling out the dough, cutting out the small pizza bases and sprinkling the toppings.
