Garam Masala is basically a North Indian spice mix. The spices are lightly roasted and ground to a fine powder generally added towards the end of a cooking process to retain a nice aromatic flavor. The constituents may vary slightly in proportion, region wise and with some rajma masala, you can cook some delicious rajma with rice at your home. Typically a Punjabi Garam Masala consists of cumin seeds, cloves, black or white peppercorns, or both, star anise, mace, nutmeg, black cardamoms. We keep this in an airtight screw-top bottle so that the flavor remains intact.
Tikka Masala contains red chilies, coriander seeds, fenugreek seeds, and carom seeds in addition to the above constituents for Garam Masala. It may contain some salt and dried mango powder. Although it is not widely used or readily available, as it is used normally for the preparation of paneer, chicken tikka masala,rajma masala, mirch powder, some companies do have this product in the market. It is very spicy and one has to take care of the salt that one puts in the dish in which they are using tikka masala. Paneer or chicken tikka masala do call in for an onion, ginger, garlic, and tomato-based thick gravy besides using this dry tikka masala powder. Whereas Garam Masala is used in any dry vegetable prepared or ones with gravy, besides in pulses or other nonveg dishes. Many masala brands in India serve good taste and quality like – Masala, Spices, the taste of the Masala, and many more. However, the perfect blend of the right taste is difficult to find. Hence, I prefer different brands for different masalas.

Similarly, Badshah’s Pav Bhaji masala is unique as well asmirch powder with different authentic tastes. The taste, aroma, and color addition to the dish varies from brand to brand. So, these are some of the spices which my household uses. So, there is essentially no one brand that sells the best masala in India. It completely depends from person to person. Dry roast all the ingredients till golden brown or till the nice aroma rises. You can also dry roast the ingredients separately, this way we can have control over burning. You can roast cardamom with the pods and remove the pods while grinding. Once it cools, blend it in a mixer or coffee grinder to a slightly coarse powder, store in an airtight container.
