DENATURATION. Environmental factors in a cell help determine the final shape of a polypeptide. Changes pH, temperature, ionic concentrations, etc., may unravel the protein or change its 3D shape by disrupting the bonds and interactions that hold it's tertiary structure .

  2. In some cases when the denaturing agent is removed, shape and function are regained (ie. Heat /chemical), unless the primary structure was disturbed. • Denaturation can be harmful: ex. prolonged fever...see pg 47. • Useful applications of denaturation: • curling/perming hair, • blanching fruits and veggies, • curing meat/veggies, • cooking food helps to break it down. • Other examples: thermophiles, gastrin,
