  2. Jollof Rice cuisine is known for its deep red color, a hint of spice, and aromatic flavors; cooked in a stew with rice altogether in a single pot. This makes so much sense knowing the originators or aka the "Senegambian region of western Africa" of jollof rice “benechin” which means one pot. Jollof rice is said to have been traced as far back as the 14th century during the ancient Wolof empire, which was also known as the Jollof Empire. A region that produces rice abundantly earning its name as the grain coast. ollof rice to west Africa as fried rice to China, risotto to Italy, biriyani to India, and paella to Spain. Alright, I hope that helps introduce what jollof rice symbolizes in West Africa. Jollof rice is the most popular dish in West African cuisine. The red color that comes from the tomato paste is particularly striking. Thorough cleaning and precooking of the rice are important during preparation. This allows the starch from the grains to be dissolved, in addition to the rice looking nice and fluffy. The tomato, onion, and broth sauce in which the rice is cooked make the taste so spicy and hearty that the recipe immediately won me over! She was mentored by a great influential woman in her life who happened to be Nigerian. Through this experience, Carol learned that the main differences between each country’s styles were the traditional spices used. Carol believes “the spices make all the difference with the flavors,” she says. Due to this Carol developed a series of special blends of a spice & herb mix.
