2.  Pancake Organics is a supplier of organic coconut products, including organic coconut sugar, organic virgin coconut oil, organic coconut flakes and organic coconut flour to North America. We have exclusive partnerships with our Indonesian and Sri Lankan farmers and provide a direct link between the farms and our end users.

4.  Coconut sugar is rich in vitamins and minerals and is considered a healthier alternative to white sugar.  Our organic coconut sugar is 100% natural and non-GMO. No preservatives or additives are used when making the product.  Coconut sugar has a slight caramel flavor which makes it a great choice as an ingredient in many baked or confectionary goods.  Coconut Sugar can conveniently be substituted 1:1 with white sugar.  Coconut Sugar is a healthier alternative for diabetics or those prone to high blood sugar. Coconut sugar has a glycemic index of 35, nearly half that of white cane sugar (68), allowing the body to digest and process the sugar more smoothly.

6.  Coconut oil can be manufactured several ways: RBD (refined, bleached, and deodorized), wet and dry milled, hydrogenated or fractionated. Pancake Organics’ Coconut oil is cold-pressed, the most pure and versatile form of the product that can be used both in cuisine and cosmetics.  Organic coconut oil has many benefits including treatment of skin and hair, as a metabolic enhancer, and as an ingredient in cuisine.  Cosmetically, cold-pressed coconut oil can be used as a condition to repair damaged, or dry hair, or when mixed in 1:2 ratio with coconut sugar, a homemade coconut oil sugar scrub can be made to exfoliate and cleanse the skin.  The most common of its uses, coconut oil can also be used as a food ingredient in salads, cakes, cookies, ice-cream, and in whipped toppings for baked and other confectionery goods.

8.  Organic coconut flour is a delicious, healthy substitute for wheat and different grain flours. Coconut flour is naturally high in fiber and lower in digestible carbohydrates, making it a better weight-loss option.  Organic coconut flour is also high in protein and gluten-free, making it a great option for paleo- or gluten-free diets.  It is produced from the whitish kernel residue left following extraction of Virgin Coconut Oil and possesses a potential application in protein- fiber enriched food products.  Coconut flour has a naturally nutty-sweet taste, making it an especially good substitute for dessert and baking items when used in a 1:3 ratio with traditional wheat flours.

It is high in dietary fiber and protein.  Coconut flakes are made by breaking down the dried kernel of the fruit, whilst maintaining all the fiber and macro-nutrients of the fresh coconut. It is accordingly a very good source of natural minerals and vitamins.  Studies have shown coconut may also help prevent heart disease, constipation and other kind of digestive issue.  Do to its abundance in medium-chain fatty acids, coconut also plays an important part in metabolism and bone development.
