Place potatoes in a saucepan with water. Bring to a boil, then simmer for 10 minutes or until tender. Drain the potatoes and place in a large baking dish with the onion. Combine the butter and oil together and coat the potatoes and onion in the mixture, then bake at 220 degrees Celsius. Roast for 25 to 30 minutes, or until the potatoes are nice and crispy. Remove from the oven and toss the kale through. Garnish with snow peas and parsley.
