Time Taken: To make noodles, 1.5 hours; For Hakka Noodles, 20 minutes Serves 2 Featured Products: KitchenAid Stand Mixer, Pasta Roller and Cutter Attachment, Professional Grade Non-Stick Cookie Sheet INGREDIENTS: For Noodles – All-purpose flour: 130 gms – Baking soda: ½ teaspoon – Salt: ¼ teaspoon – Egg: 1 no. – 1.5 to 2 tablespoon water ( this will depend on humidity and the egg, so start by adding 1 tablespoon & then see how much you need to bring the dough together) – Cornflour for dusting

METHOD: METHOD: – Sieve the flour into a bowl, add the baking soda and salt and stir to combine. – Make a well in the centre and crack open the egg. -Use a fork to mix it with the flour and then add 1 Tbs water, adding extra as you need it to form a dough. -Knead the dough (I did so in the bowl), for a good 10 minutes until the dough is springy to the touch. This means that when you press your finger on it, dough should spring back. – Place in zip lock bag for 40 minutes. – After 40 minutes, use a rolling pin to slap the dough (still in bag) into a slight rectangle. Then place on floured surface and shape into – Then place on floured surface and shape into larger rectangle and then fold into thirds. – Place back in zip lock for another 20 minutes. After 20 minutes, place on a floured surface and cut into 4 (you could cut into 2, but I find it easier to handle). – Attach the Pasta Roller and Cutter Attachment to the hub of the Stand Mixer and place it in the widest setting – no.1. Shape the dough into slight rectangle and run it through the attachment. Then fold into thirds and run it through once more. Place it on the next setting and run it through twice (no folding into thirds required now) and continue till setting no.4. 4. Now attach the cutter attachment and use it to cut the rolled dough into strands. Dust the baking sheet with cornflour and place the noodles in mounds, dusting again with cornflour (dust well, they can be sticky). Repeat steps 3 and 4 with remaining dough balls

INGREDIENTS: For Hakka Noodles – Sesame oil: 1 tablespoon – Spring onions (whites thinly sliced and green bits chopped): 2 nos. – Cloves garlic (minced): 3 nos. – Chilli flakes: ½ teaspoon – Light soy sauce: 2 tablespoons – Carrot (thinly slice): 1 no. – Salt METHOD: – Bring a large pot of salted water to boil and place the noodles in it and cook for barely 2 minutes, the noodles should be al dente as they will finish cooking in the stir fry. Drain the noodles and place the noodles immediately in cold water. – In the meantime, heat the oil in a wok and add the garlic and chilli flakes and cook until fragrant. Now add the whites of the onions and cook. Now add the veggies and let them cook slightly. Add the noodles and toss through to combine with everything, add soya sauce and toss to combine. Add some salt to taste and toss through. Serve immediately.
