Fat in Milk Fat & cholesterol • Milk fat is a complex mixture of lipids • Triglycerides are the major lipid type • Stabilized by phospholipids, proteins • Saturated fatty acids: • butyric and caproic • Released by hydrolysis, lipase • Fat soluble vitamins • Fat droplets form the cream of milk (also contains some protein) • Fat is the major energy source of the young obtained from milk
