Theroot stocksandsoilsaremostimportant inproducingexcellent fruit from thevineyards. • Thesurrounding SantaLuciaMountainsarevery important to Carmel Valleyviticulture. Thelocalhillshold back themarinelayerand broadbreezes, whichisbeneficial toproducing consistentlygood fruit.Sedimentarysoils,suchas,chockrockand Carmel stone also playamajorroleinwineproducingmethodsby providing good soildrainage.Holman Ranch“stressesthevines”ofthefruit withemphasisonreproduction,which inturn,stopsgrowthand ripensfruit. Ourcoastal climate withwarmsunnydaysand cool nightsisworld renowned forlight anddrywhite wines.Like CarmelValleyitself,ourHouseWhiteisalittleruggedand wild,but mostlyrefreshing and absolutelygorgeous. • Wine Caves: • The wineryatHolmanRanch,located inThe Caves,iscompletelyunderground inordertotake advantageofthenaturalcoolingandhumidityheld below.The3000 squarefootareamaintainsa constanttemperatureof58°F-60°Fand containsfour750gallon tanks,four1200gallontanks, and fouropentop tanks thatcanhold twotonseach.Onehundred (100) Frenchoak barrelsaremaintained yearround.Wineryoperationssuchas destemming,pressing,fermenting and agingtakeplacewithinthecool environment ofThe Caves, whilebottling isdonedirectlyoutsideusingamobilebottlingline.During harvest,6to8tonsof grapesadayareprocessed.Thismayseemlow but it isduetothefactthatharvestinghoursarebetween7amtonoononanygivenday.Grapesarehand pickedand loaded intohalfton bins,transferred tothe winery bytractorandthenmoved byforklift tothedestemmer. • Whitewines takearound three weekstoferment at50°Fand arebottledinFebruary,whileredvarietalsferment fortwoweeksand arebottled inearlyJune.Allskins,seedsand stemsare compostedandreturned tothefields.Slowmonthsforour wineryareJune,JulyandAugust withthebusiest timebeingSeptember. Thewinerywill produce3000-5000casesannually. • Vineyard&WineryBackground: • Located atthenortheastern tipofthe Carmel ValleyAppellation,thefamily-owned HolmanRanchresidesapproximately12milesinland fromthePacificCoast.Immersed inhistoryandromance, • theranchhasnot onlyproventobeanexcellentgrowing locationforourvineyardsbut alsofor • theTuscanvarietal olivetreeswhichhaveflourished underthetemperateclimate. • Ourestate-grown winevarietalsareplantedonapproximately21acresofundulatingterrain. • The winesproduced areunfined and craftedtodeliverthetruevarietal ofthegrapefromharvesttobottle. • The climateandterroiroftheappellationhasplayedacriticalpart inthesuccessofour wines.Thewarmthofourinland valleycoupled withthecooling marinelayerhasestablisheditselfasanideal microclimatefortheproductionofPinot NoirandPinot Gris.
