  5. Chicken Broth 1 bone-in chicken breast (8 oz) 1/4 onion large 1/4 stalk of celery 1/4 carrot large dice 2 quarts of water Combine ingredients • Bring to a boil then reduce to a simmer • Cook chicken to 160 degrees, place in plastic container and label

  6. Enchilada Soup ¼ c. vegetable oil ¼ onions (diced) 1/3 cup flour 8 oz Chicken Broth 16 oz. Enchilada Sauce ½ tsp granulated garlic ½ tsp chili powder ½ tsp cumin 1/8 tsp cayenne pepper ½ tsp oregano Diced Chicken Breast Salt and pepper to taste

  7. Enchilada Soup (Method) • Sauté onion in oil; add flour to make roux • Add the broth, chicken base and Enchilada sauce • Bring to a boil. As soon as it begins to thicken reduce to a low simmer • Add granulated garlic, chili powder, cumin, cayenne pepper, oregano, and salt and pepper to taste • Add the diced chicken and serve with cheese and fried tortilla chips
