  4. What is cheese? A food consisting of coagulated, compressed, and usually ripened curd of milk separated from the whey

  5. Cheese Making Steps • Pasteurize • Ripening • Renneting • Cutting • Cooking • Draining • Salting • Pressing • Drying • Waxing • Aging

  6. The Beginning • All started in 1919. • 94 Vermont dairy farmers purchased the Cabot Village creamery. • They had the idea to take their left over milk and make butter. • Started under the name Rosedale.

  7. The Transformation • During the 1930’s people started moving to the cities. • With this came the need to ship their products. • Cabot soon started shipping milk to bottling companies. • Also shipping cheese, butter and cottage cheese.

  8. The Change • By the 1980’s the number of total farms in Vermont dropped by 2,000. • By then Cabot dropped the name Rosedale. • In 1992 they merged with Agri-Mark Inc. • Combining to total 1,500 farmer owners and four processing facilities. • Since then Cabot has become extensive and world know and loved.
