  4. Anemia What is Anemia? A decrease in the normal amount of hemoglobin and red blood cells circulating in the bloodstream, causing a reduction in the supply of oxygen to the tissues.Chain:Not enough iron available  hemoglobin production is limited  affects the production of red blood cells  Due to the lack of sufficient iron Therefore, the body needs more iron to make hemoglobin

Anemia • Effects of Anemia • - Red blood cells are needed to carry oxygen throughout the body • Anemia results in less oxygen reaching the cells and tissues, affecting their function • More information: • Anemia doesn't develop immediately • Person progresses through stages of iron deficiency: • ~ begins with iron depletionin which the amount of iron in the body is reduced but the amount of iron in the red blood cells remains constant. • ~ If iron depletion isn't corrected, it progresses to iron deficiency, leading to anemia

Food Nutrition • Diet Guide for Anemia • Increase intake of Iron - hemoglobin production will not be limited - increase production of red blood cells • Iron from Animal Sources • more easily absorbed than iron from plant foods. • Vitamin C- it increases the intake of iron • Vitamin B12 • Lack of Vitamin B12 will contribute to Anemia • Folate (water-soluble B vitamin ) • -necessary for the production and maintenance of new cells

  7. The 3 Meals • Breakfast • Tuna sandwich • Egg sandwich • 1 cup of chocolate milk Lunch • Potato and carrot porridge • Braised peanuts • 1 cup of chocolate milk • Dinner • Rice • Spinach and tofu soup • Dark-sauced fish

  8. Recipe - Breakfast • Ingredients: • 1 can of tuna $2.25 • 1 egg $1.60/2= $0.80 (sharing) • 2 slices of bread $1.50/2= $0.75 (sharing) • 1 200ml-bottle of chocolate milk $1.25/bottle • Mayonnaise

Recipe - Breakfast • Boil 1 egg for ~minutes till it is hard-boiled • Remove the egg’s shell and smash the egg to small pieces and add 2 tablespoons of mayonnaise • Open the can of tuna and drain off the water • Add 2 tablespoons of mayonnaise to the tuna and mix well • Remove crust from 2 slices of bread. • Put egg on one piece of bread and fold into half • Put tuna onto the other piece of bread and fold into half • Pour the ½ of chocolate milk into a glass

  10. Recipe - Lunch • Ingredients: • 1 potato $0.40 • 1 carrot $2.10 • 1 tin of braised peanuts $0.50 • The remainingmilk from breakfast $1.25 • ¼ cup of brown rice $4.20

Recipe - Lunch • Add 2 cups of water to ¼ cup of brown rice • Peel the skin of the potato and carrot • Slice the carrot into thin slices • Cut the potato into small pieces • Put them into the pot and boil for ½ h • Heat up the peanuts for 5 minutes • Put the porridge and peanuts into a bowl each • Pour the remaining chocolate milk into a glass

  12. Recipe - Dinner • Ingredients: • ¼ cups of brown rice  $4.20 • Spinach  $0.75 • Tofu  $0.80 • Fish (Bayka)  $3.85 • Oil • 3 pieces of garlic  $1.00/2= $0.50 (sharing) • 1 small piece of ginger  $1.15 • Black sauce • Ikan bilis

Recipe - Dinner • Cook ¼ cup of brown rice • Add 2 cups of water and 2 tablespoons of ikan bilis into a pot • Boil the water for 20 minutes • Cut the spinach into smaller pieces and slice the tofu into small pieces and put into the pot • Bring to boil for 3 minutes • Heat oil in a wok • When the oil is very hot, fry the fish till its cooked and crispy • Drain all the oil from the fish and put it aside • Smash and chop the garlic to very small pieces • Slice the ginger into thin strips • Put approx. 1 tablespoon of oil into the wok • Fry the garlic till its golden brown • Add in ginger, 4 tablespoons of black sauce and ¼ cup of water • When boiling, add cooled fish and turn it around • Pour soup into bowl, scope some rice and put the fish onto a plate
