Pawpaw Gelato Makes 1 scant quart (960 ml), to serve 6–10 Combine 3 tablespoons (45 ml) of the half-and-half with the cornstarch in a small bowl. Stir until smooth set aside. In a medium saucepan, bring the remaining cup (240 ml) of half-and-half and the sugar to a boil over medium-high heat (keep an eye on it, as the mixture can boil over easily). Reduce the heat, and keep at a robust simmer for 4 minutes. Stir the cornstarch mixture once more, and gradually whisk it into the boiling half-and-half. Once it returns to a boil, cook for 1 full minute, whisking all the while it will become thicker, but it still won’t be terribly thick. Scrape into a large bowl, and whisk in the sour cream. Let the mixture cool completely (I recommend using an ice bath). Once cool Add the pawpaw pulp, vanilla, and lemon juice. For a silky-smooth gelato, puree the gelato base using a blender, food processor, or immersion blender for 1 minute. Churn the gelato base in an ice cream maker according to the manufacturer’s directions. The gelato will have the consistency of a thick, stiff milk shake when it’s ready. Pour it into a shallow metal pan (it cools the gelato faster and will be easier to scoop from), and place in the freezer for at least a few hours to set up. The frozen gelato will keep, covered with foil pressed directly on its surface, for about 1 week. For optimal enjoyment, let it soften for about 10 minutes before serving. Ingredients 1 cup plus 3 tablespoons (285 ml) half-and-half, divided 2 tablespoons cornstarch ⅔ cup (130 g) granulated sugar ½ cup (120 ml) sour cream (preferably full fat) 2 cups (480 ml) pawpaw pulp 1 tablespoon vanilla extract 2 teaspoons lemon juice About Sara Bir Sara Bir is a chef and a writer.
