  1. Vitamins13 different kinds • Help regulate many vital body processes, including digestion, absorption, and metabolism of other nutrients • Are known as micronutrients because they are only needed in small amounts • Supply no calories • Only vitamin D is made in the body, the rest you must get in food • There are two classifications of vitamins 1. Water-soluble 2. Fat-soluble

  2. Water Soluble Vitamins • Include Vitamin C and the eight B vitamins • Dissolve in water and pass easily into the blood stream • Excess amounts are excreted in urine so they can’t be stored • Need daily • Cook carefully so that only minimum amount of vitamins are lost

  3. Vitamin C • Ascorbic acid • Helps formation of body tissues • Helps wounds heal • Promotes healthy teeth and gums • Scurvy: lack of vit. C cause serious gum damage, • “limeys”or sailors ate lime to prevent scurvy

  4. B Vitamins • B1 thiamine • B2 riboflavin • B6 • B 3 Niacin • Folic Acid • B12 • Pantothenic acid

  5. Fat Soluble Vitamins • Vitamins A, D, E & K • These vitamins are stored in the liver and fatty tissue • Excess build up of these vitamins can have a toxic effect on the body

You can obtain vitamin A in two ways From plant eating organisms (cows) From carotenoids in plants like beta carotene (carrots, broccoli, spinach) Helps eyes, bones, and tissues Helps absorption of calcium Added to milk and OJ Produced in the skin with exposure to sunlight Called the “sunshine” vitamin Rickets: bone disorder caused by lack of vitamin D Vitamin A Vitamin D

  7. Important in blood clotting Helping regulate calcium Spinach, eggs, liver, cabbage and tomatoes Widely found in foods like oils, legumes, nuts, seeds, and wheat germ May help in transporting O2 in blood May help protect against red blood cell destruction Vitamin K Vitamin E
